Broccoli & Bok Choy Salad

If your main course needs a punch, then go for my Broccoli & Bok Choy Salad. It’s quick and uncomplicated to make, and will do wonders for your hormones. Some raw, and some cooked; all tossed together with a divine sesame dressing. 

Cruciferous veggies like bok choy, cabbage and broccoli contain DIM. A great nutrient to support hormone detox at a cellular level. We’ve gone with sesame seeds - not only for crunch - but for its lignin content. A phenomenal aid to reduce excess estrogen.

If your main course needs a punch, then go for my balancing Broccoli & Bok Choy Salad. It’s quick and uncomplicated to make, and will do wonders for your hormones. Ingredients

For the salad
  • 1 aubergine, cut into bite-sized pieces
  • 2 bok choy, halved and sliced
  • Handful of coriander, roughly chopped
  • Salt and pepper, to taste
  • ½ red cabbage, roughly chopped
  • 600g tenderstem broccoli
  • 1 tablespoon sesame seeds
For the dressing
  • 2 tablespoon sesame oil
  • 1 tablespoon of honey
  • 1 tablespoon tamari (gluten-free alternative to soya sauce)
  • Pinch of chilli flakes for flavour

Instructions

  1. Preheat the oven to 240 degrees celsius.
  2. Place aubergine and roast for about 30 minutes in a drizzle of olive oil.
  3. Layer the bok choy and broccoli over the aubergine. Add some salt and more olive oil. Bake for another 10 to 15 minutes, or until the greens are tender and just starting to char on the edges. And then, remove and allow to cool.
  4. Next, make the dressing. Toss the vegetables in the dressing before serving. Add sesame seeds, shredded red cabbage and coriander to garnish.
