Try this cauliflower salad: tossed with cumin, coriander, and fennel seeds, garlic, and topped with fresh herbs, pomegranate seeds, and toasted almonds. A vibrant and nutritious dish perfect for any occasion!
Ingredients
- 1 head of cauliflower, cut into florets
- 1 tablespoon cumin seeds, crushed
- 1 tablespoon coriander seeds, crushed
- 1 tablespoon fennel seeds, crushed
- 1 clove garlic, crushed
- 20ml olive oil
- Chilli flakes, to taste
- Salt and pepper, to taste
- 15g mixed coriander and parsley leaves, roughly chopped
- 75g pomegranate seeds
- 70g toasted almonds
Instructions
- Preheat the oven to 180 degrees celsius.
- Roast the cauliflower with spices, garlic, salt, pepper and half the olive oil olive oil. Roast until tender and lightly golden.
- Place cooked cauliflower in a large bowl. Add herbs, pomegranate seeds and toasted almonds.
- Toss together, drizzle with additional olive oil if desired.
