Try this cauliflower salad: tossed with cumin, coriander, and fennel seeds, garlic, and topped with fresh herbs, pomegranate seeds, and toasted almonds. A vibrant and nutritious dish perfect for any occasion!

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon cumin seeds, crushed
  • 1 tablespoon coriander seeds, crushed
  • 1 tablespoon fennel seeds, crushed
  • 1 clove garlic, crushed
  • 20ml olive oil
  • Chilli flakes, to taste
  • Salt and pepper, to taste
  • 15g mixed coriander and parsley leaves, roughly chopped
  • 75g pomegranate seeds
  • 70g toasted almonds

Instructions

  1. Preheat the oven to 180 degrees celsius.
  2. Roast the cauliflower with spices, garlic, salt, pepper and half the olive oil olive oil. Roast until tender and lightly golden.
  3. Place cooked cauliflower in a large bowl. Add herbs, pomegranate seeds and toasted almonds.
  4. Toss together, drizzle with additional olive oil if desired.
