Green Beans with Almonds, Dill & Feta

If vegetables must be on your plate at every meal, then you're going to need interesting and delicious ways to get them in. Green beans, with a twist, has never been so easy. The almonds, dill and feta gives the dish a fresh and healthy finish.

Ingredients

  • 300g green beans, ends cut off
  • 10g dill, stems removed and roughly chopped
  • 30g or 1 round of feta, broken into chunks
  • 30ml olive oil, to taste
  • Salt and pepper, to taste
  • 30g flaked or chopped whole almonds

Instructions

  1. Fill a pot with hot water and bring to a boil. Add in the green beans and cook for just 4 minutes, until they are bright green and still crispy. Strain the green beans and run cool water over them to stop the cooking process.
  2. Next, add your almonds to a pan without oil, over medium heat. Keep watching them and toast for about 5 minutes. Do not allow them to burn as this can happen quickly.
  3. Now place the green beans onto a platter. Add a drizzle of olive oil, and salt and pepper to taste. Garnish with toasted almonds, dill and feta.
