If your lunch time needs an Omega 3 kick, look no further than our easy-peasy Sardine Spread. I've double-dosed on Omega 3 by pairing the spread with flaxseed crackers. Flaxseed is a favourite form of plant-based Omega 3 fats.

Ingredients

  • 2 tins sardines
  • 2 Tbsp olive oil, extra-virgin cold-pressed
  • A handful parsley or coriander
  • 1 red onion, pickled in apple cider vinegar or fresh
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Drain the brine or oil for the sardine tins.
  2. Add the drained sardines, and all other nutrients to your blender or nutribullet.
  3. Blend a couple of times until you have a chunky spread.
  4. Garnish with fresh parsley and coriander.
