If your lunch time needs an Omega 3 kick, look no further than our easy-peasy Sardine Spread. I've double-dosed on Omega 3 by pairing the spread with flaxseed crackers. Flaxseed is a favourite form of plant-based Omega 3 fats.

Ingredients
- 2 tins sardines
- 2 Tbsp olive oil, extra-virgin cold-pressed
- A handful parsley or coriander
- 1 red onion, pickled in apple cider vinegar or fresh
- Juice of ½ lemon
- Salt and pepper to taste
Instructions
- Drain the brine or oil for the sardine tins.
- Add the drained sardines, and all other nutrients to your blender or nutribullet.
- Blend a couple of times until you have a chunky spread.
- Garnish with fresh parsley and coriander.
