Looking for a versatile dish that can serve as a protein-packed alternative or a veggie-rich snack? These Zucchini and Feta Protein Fritters are the perfect solution. Ingredients

  • 2 eggs with yolk
  • ¼ cup almond flour
  • 1 (30g) round feta
  • 250g zucchini, end chopped off
  • 1 medium carrot, peeled
  • Soft green part of 1 spring onion
  • 15g roughly chopped parsley
  • Salt and pepper to taste
  • ½ small clove of garlic (optional)
  • 1 Tablespoon coconut oil

Instructions

  1. Grate the zucchini and the carrot on the large side of the grater, not the finest option. Place into a colander, add a sprinkle of salt, and allow to sit for 10 minutes.
  2. While the veggies are sitting, crack your eggs into a separate bowl and whisk together briefly with a fork. Roughly chop the parsley (remove the stems) and finely slice the soft part of the green onion.
  3. Next, take handfuls of the grated veggies and squeeze out any excess liquid. You can place between two layers of paper towel, and press gently to further reduce moisture content.
  4. Now, add the egg mixture, feta chunks, parley, spring onion, almond flour, salt and pepper, and garlic (if using). Mix the ingredients together.
  5. Place the stove top on medium to high heat, add the coconut oil and allow to melt. Take a spoon to collect the mixture from the bowl, and shape into rounds. When shaping the fritters, it looks like they may fall apart, but as soon as you add them to heat then they start to bind. Be gentle when placing the fritters into the pan.
  6. Pan-fry each fritter for about 5 minutes on each side, over medium heat, or just until the surface of the cakes turns golden.
  7. Serve with a dollop of hummus as a snack, or as an addition to a salad.
