Enjoy a Healthified Potato Salad! Baby potatoes, yoghurt, basil pesto, Parmesan, and lemon create a delicious side for 4.
Ingredients
- 400g baby potatoes
- 1 cup medium fat yoghurt
- 2 Tbsp store-bought basil pesto
- 30g parmesan
- Salt and pepper, to taste
- 1 Lemon, cut into wedges
- 10g fresh basil leaves
Instructions
- Boil the potatoes until cooked.
- Allow the potatoes to cool while you make the sauce.
- Mix together ½ cup medium-fat yoghurt, 2 Tbsp basil pesto, salt and pepper.
- Mix the sauce into the cooled potatoes.
- Add shaved parmesan, basil leaves and lemon wedges just before serving.
