Enjoy a Healthified Potato Salad! Baby potatoes, yoghurt, basil pesto, Parmesan, and lemon create a delicious side for 4.

Ingredients

  • 400g baby potatoes
  • 1 cup medium fat yoghurt
  • 2 Tbsp store-bought basil pesto
  • 30g parmesan
  • Salt and pepper, to taste
  • 1 Lemon, cut into wedges
  • 10g fresh basil leaves

Instructions

  1. Boil the potatoes until cooked.
  2. Allow the potatoes to cool while you make the sauce.
  3. Mix together ½ cup medium-fat yoghurt, 2 Tbsp basil pesto, salt and pepper.
  4. Mix the sauce into the cooled potatoes.
  5. Add shaved parmesan, basil leaves and lemon wedges just before serving.
