Enjoy a refreshing twist on classic Coronation Chicken: Mix diced grilled chicken breast with Greek yogurt, curry powder, and chopped apricot. Serve spoonfuls into crisp lettuce cups for a light and satisfying summer evening meal.

Ingredients

  • 1 white onion, diced
  • 450g skinless chicken breasts
  • 1 teaspoon mild curry spice
  • 1 small fresh apricot, finely chopped
  • 250mls organic full cream plain yoghurt
  • 125g smooth organic full cream cottage cheese
  • 100ml of red wine
  • 1 teaspoon table sugar
  • Juice from 1 lemon
  • 1 teaspoon of tomato paste
  • 3 dried bay leaves
  • 10ml coconut oil (for cooking)

Instructions

  1. Air-fry the chicken breasts for 20 minutes at 200 degrees Celsius, or until cooked.
  2. Heat the coconut oil in a pan at medium heat.
  3. Add the diced onion and cook until translucent.
  4. Once onions are translucent; add the bay leaves, dash of red wine, tomato paste, curry paste, table sugar and mix together over low heat for 2 to 3 minutes.
  5. Turn off the stove top. Let the mixture cool while you shred the cooked chicken using a fork.
  6. Add the shredded chicken breast and mixture to the yoghurt and smooth cottage cheese. Mix in the chopped fresh apricot. Serve over a bed or green leaves or in leaves to create a 'wrap'. Add diced fresh vegetables (like cucumber, peppers and red onion) to give the dish a summer flare.
