Ingredients
- 1 white onion, diced
- 450g skinless chicken breasts
- 1 teaspoon mild curry spice
- 1 small fresh apricot, finely chopped
- 250mls organic full cream plain yoghurt
- 125g smooth organic full cream cottage cheese
- 100ml of red wine
- 1 teaspoon table sugar
- Juice from 1 lemon
- 1 teaspoon of tomato paste
- 3 dried bay leaves
- 10ml coconut oil (for cooking)
Instructions
- Air-fry the chicken breasts for 20 minutes at 200 degrees Celsius, or until cooked.
- Heat the coconut oil in a pan at medium heat.
- Add the diced onion and cook until translucent.
- Once onions are translucent; add the bay leaves, dash of red wine, tomato paste, curry paste, table sugar and mix together over low heat for 2 to 3 minutes.
- Turn off the stove top. Let the mixture cool while you shred the cooked chicken using a fork.
- Add the shredded chicken breast and mixture to the yoghurt and smooth cottage cheese. Mix in the chopped fresh apricot. Serve over a bed or green leaves or in leaves to create a 'wrap'. Add diced fresh vegetables (like cucumber, peppers and red onion) to give the dish a summer flare.
