Whip up this easy-to-make Moroccan Cauliflower & Chickpea Salad for your next gathering; it's a crowd-pleaser packed with spiced cauliflower, quinoa, and a zesty dressing, ensuring a flavourful and healthy side dish.

Ingredients

Salad
  • Cauliflower, 1 medium head
  • Olive oil, 2 Tablespoon
  • 1 teaspoon ground coriander
  • 3/4 teaspoon ground turmeric
  • 1 teaspoon salt, ground
  • 1/2 teaspoon black pepper, ground
  • 3 cups cooked white quinoa
  • 1 tin chickpeas, rinsed and drained
  • 1/4 cup flaked almonds
  • 1/4 cup raisins (or chopped dates)
  • 1/4 cup roughly chopped mint leaves
  • 1/3 cup roughly chopped Italian parsley
Dressing
  • 1/3 cup olive oil
  • 2 Tablespoons chopped Italian parsley
  • 1 clove of crushed garlic
  • 3/4 teaspoon paprika
  • 1/2 teaspoons ground cumin
  • 1/4 teaspoon kosher salt
  • 30 mls fresh lemon juice

Instructions

  1. Heat the oven to 200 degrees Celsius.
  2. Take a large bowl and add the olive oil, coriander, turmeric, 1/2 teaspoon salt and black pepper. Add the cauliflower florets and coat in the spice mix. Spread evenly on a baking tray and roast for about 30 minutes until crisp-tender. Turn over the cauliflower at 15 minutes into cooking (half way) to prevent it from burning.
  3. If you haven't already cooked the quinoa, cook the quinoa according to the packet's instructions. Add the drained chickpeas to the cooked quinoa.
  4. Prepare the dressing while you wait for the cauliflower to finish cooking. Mix all salad dressing ingredients together.
  5. Add the cooked cauliflower to the chickpeas and quinoa. Toss over the dressing. Add almonds, raisins or chopped dates, fresh mint and parsley for garnish. Serve room temperature, hot or cold.
