Ingredients
- 8 (+- 120g each) skinless chicken breasts
- 30g fresh basil, destemmed
- 100g baby spinach
- 1 large onion, diced
- 1 heaped teaspoon dried parsley
- 1 Tablespoon dried oregano
- 240g (drained weight) sun dried tomatoes, drained and roughly chopped
- 2 tins (400ml) reduced fat (light) coconut milk
- 1 Tablespoon olive oil
- 1 Tablespoon coconut oil
- 2 teaspoons crushed garlic
- Salt to taste
- Black pepper to taste
- Juice of 1 lemon
Instructions
- Preheat the oven to 220 degrees celsius.
- Cook the onions and garlic in the coconut oil over medium heat, until the onions are soft and turning translucent. Set aside once cooked.
- Place the chicken breasts in a single layer in an oven proof dish. Mix the oregano, parsley, salt and black pepper in a separate bowl. Drizzle the olive oil over the chicken breast and then rub the seasoning mixture on top of the chicken breasts.
- Next, shake the coconut milk and pour into a bowl. Mix in the sun dried tomatoes and cooked onion. Then pour the mixture around the seasoned chicken.
- Bake the chicken for about 25 minutes to 30 minutes until the chicken is cooked through.
- Once the chicken is cooked, remove the dish from the oven and add the chopped basil and baby spinach. Cover with tin foil and allow the dish to sit for 10 minutes until the greens have wilted into the dish.
- Squeeze over the juice of one lemon into the mixture just before serving.
