Ingredients

For the stew:
  • 15g coriander, chopped
  • 15g mint, chopped
  • 2 bay leaves, dried
  • 1 teaspoon paprika
  • 1 teaspoon cumin, ground
  • ½ teaspoon chilli flakes
  • 1 onion, chopped
  • 2 level teaspoon garlic, freshly minced
  • 70g tomato paste
  • 200g cherry tomatoes, halved
  • 2 large aubergines, chopped to liking
  • 1 Tablespoon coconut oil
  • 1 teaspoon brown sugar
  • 1 cup (250ml water)
  • 1 can (400g) chickpeas, drained
  • 1 Tablespoon olive oil, for roasting aubergine

Instructions

For the tzatziki:
  1. 1 cup (250ml) full fat plain yoghurt
  2. 150g to 250g (medium-sized) cucumber
  3. 1 level teaspoon garlic, crushed
  4. Juice from half lemon
For the stew
  1. Preheat the oven to 180 degrees celsius.
  2. Chop the aubergine into bite size pieces. Lay on a baking tray and drizzle with some olive oil. Bake for 30 minutes until tender on the inside. Set them aside.
  3. In a large pit, heat the coconut oil and add the onions. Sauté the onions for about 10 minutes over medium heat until soft and translucent. Add the garlic to the pan and cook for the last 30 seconds until fragrant.
  4. Now, add in the tomatoes, tomato purée, cumin, paprika, chilli flakes, bay leaves and sugar to the pot.
  5. Season with some salt and add water. Cover with a lid and leave the mixture to simmer for 10 minutes.
  6. Next, add in the aubergine and chickpeas. Stir well to combine. Leave to simmer for 5 minutes.
  7. Lastly, add the fresh herbs to the mixture, and remove the dish from the heat.
For the tzatziki
  1. Grate the whole cucumber into a large bowl.
  2. Now add the yoghurt, and then mix in the garlic.
  3. Finally, add the lemon juice and stir to combine.
  4. Taste, and determine the need for salt and pepper.
