No-fuss Persian Lamb Stew

Try this healthy Persian lamb stew packed with flavourful peppadews and succulent lamb, perfect for a comforting meal. Enhance the dish with the creamy texture of cannellini beans.

Ingredients

  • 600g grass-fed organic lamb chunks
  • 40g (undrained weight) peppadews, drained
  • 2 medium onions, diced
  • 15ml ground cinnamon
  • 15ml ground cumin
  • 1 Tbsp honey
  • 2 tins chopped tomatoes
  • 15g fresh parsley, rinsed and chopped for garnish
  • 2 Tbsp (30ml) bone broth powder, mixed with 500ml water
  • 1 Tbsp avocado oil for cooking
  • Salt and pepper to taste

Instructions

  1. Heat the avocado oil in a large pot over medium-high heat. Add the lamb chunks and brown on all sides.
  2. In the same pot, add the diced onions and cook until they become soft and translucent, about 5-7 minutes. Stir in the ground cinnamon and ground cumin, cooking for another 2 minutes until the spices are fragrant.
  3. Add the chopped tomatoes and bone broth mixture. Stir well to combine. Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 15 to 20 minutes until lamb is tender.
  4. In the last 5 minutes of cooking, add in their honey and stir in the drained peppadews. Serve the stew hot, garnished with fresh parsley. Enjoy this flavorful and healthy Persian lamb stew with the added boost of white cannellini beans if desired. Garnish with parley for serving.
